Corn Soup in the Rice Cooker

    Everyone loves this corn soup, especially the kids. I like it with the vegetables whole but you can also puree it after cooking to make a smooth chowder.

    Serves: 2 

    • 1/2 potato, diced
    • 1/2 onion, finely diced
    • 1/2 teaspoon onion powder
    • 1/2 cup water
    • 2 cups chicken stock
    • 1/2 cup heavy cream
    • 1 dried chilli pepper, cut in half
    • 1/2 teaspoon garlic, diced
    • 1 tin corn, drained
    • salt and pepper, to taste

    1. In the rice cooker, place the potato, onion, onion powder and water. Let simmer until the potato is just tender and the water has evaporated.
    2. Add all the other ingredients and simmer 30 minutes.
