Mushroom and Stilton Sauce

    A great sauce for roast beef or chicken, this is a very rich combination of milk, cream, wine, egg, Stilton and Swiss cheese.

    Serves: 6 

    • 120g butter
    • 3 tablespoons plain flour
    • 3/4 cup milk
    • 3/4 cup thickened cream
    • salt and pepper, to taste
    • pinch nutmeg
    • 1/2 cup crumbled Stilton
    • 1/2 cup grated Swiss cheese
    • 1 egg yolk
    • 1/4 cup dry white wine
    • 220g mushrooms, sliced

    1. Melt half the butter in a saucepan, blend in the flour and gradually stir in the milk and cream. Bring to a simmer.
    2. Season with salt, pepper and nutmeg. Stir in the cheese until melted.
    3. Beat the egg yolk with the wine, add a little of the hot milk, then stir it into the sauce. Simmer 1 minute.
    4. Fry the mushrooms separately in the remaining butter for 5 minutes. Add to the sauce and reheat.
