Indian Cauliflower Curry

    A tasty vegetarian curry spiced with cumin and cloves. It is simplicity itself to make in the pressure cooker and takes no time at all.

    Serves: 4 

    • 2 tablespoons vegetable oil
    • 1 teaspoon cumin seeds
    • 2 cloves
    • 1/2 teaspoon peppercorns
    • 1/2 teaspoon chilli flakes
    • 1 head cauliflower, cut into florets
    • 1 cup frozen peas
    • 1 potato, diced
    • 2cm fresh ginger, grated
    • 1 clove garlic, crushed
    • 1 tablespoon curry powder
    • 1 teaspoon turmeric
    • 1 tablespoon tomato paste
    • 150ml water
    • fresh coriander leaves, to garnish
    • salt, to taste

    1. Heat vegetable oil in a pressure cooker. Add cumin seeds, cloves, pepper and chilli flakes. Saute until seeds start to pop.
    2. Add cauliflower, peas and potatoes and stir well. Add grated garlic and ginger, curry and turmeric, and stir. Stir in tomato paste. Saute 3 minutes.
    3. Add water and salt to taste then put on the lid. Cook until it gets to pressure and then 2 minutes longer. Release pressure and serve, garnished with coriander.
