Cardamom goes particularly well with apricots - if you think it sounds unusual, just wait until you've tried it! This is sure to become your favourite jam.
Rinse, stone and puree the apricots. Place in a heavy saucepan and gradually bring to a simmer for 20 minutes.
Weigh out the apricots and add half their weight in sugar, which will be about 1 kg. Add the cardamom as well and stir. Simmer on lowest heat until mixture is thick, which may take up to 2 hours. Keep stirring.
