Apricot, Passionfruit and Kiwifruit Jam

    All my favourite fruits in one jam! Make sure you use the freshest in season fruit for best results. So delicious and exotic tasting!

    Makes: 1 litre jam

    • 1 kg ripe apricots
    • 4 ripe passionfruit
    • 4 kiwifruit
    • 1 kg preserving sugar
    • squeeze lemon juice

    1. Stone and chop the apricots and place in a saucepan. Scoop out the insides of the passionfruit and add to the apricots. Peel and chop the kiwifruit and add to the mix.
    2. Add the preserving sugar and mix well. Add a squeeze of lemon juice to preserve the colour and add a touch of acidity.
    3. Bring to the boil, reduce heat and simmer 5 minutes. Pour into sterilised glass jars and seal.
