    If you can get your hands on some white currants try making them into jam - they add a lovely sour note and slight pink colour.

    Makes: 4 jars jam

    • 750g fresh apricots
    • 750g white currants
    • 750g preserving sugar

    Preparation:20min  ›  Cook:5min  ›  Ready in:25min 

    1. Pit the apricots and puree them in a blender, skin and all. Add the currants and puree well.
    2. Place the fruit puree in a saucepan with the sugar and bring to a simmer. Simmer 5 minutes, then transfer the mixture to sterilised glass jars and seal firmly. Store in a cool dark place.
