Lime adds a delightful tang to this apricot jam recipe. It's lovely on hot buttered toast for breakfast and very easy to make.


Makes: 4 jars

  • 1.2 kg apricots, pitted and quartered
  • 850g caster sugar
  • juice and zest of 2 limes

Preparation:15min  ›  Cook:30min  ›  Extra time:12hours chilling  ›  Ready in:12hours45min 

  1. In a saucepan, combine apricots, sugar, zest and juice. Cover and refrigerate overnight.
  2. Next day, bring the pot to a simmer on low heat. Cook 30 minutes, stirring frequently.
  3. Check for doneness by putting a drop of jam on a cold plate. If it sets, the jam is ready. Ladle into sterilised jars, seal and store in a dark place.
