Easiest Strawberry Jam

    Strawberry has to be the easiest jam to make since it is so naturally high in pectin. Use preserving sugar for best results.

    Makes: 4 jars jam

    • 1 kg strawberries, washed, hulled and quartered
    • 800g preserving sugar
    • juice of 1 lemon

    Preparation:20min  ›  Cook:20min  ›  Ready in:40min 

    1. In a bowl, coarsely crush the strawberries with a potato masher. Place in a heavy saucepan and cook over low heat 5 minutes, then add the sugar and lemon juice.
    2. Simmer, stirring, 15 minutes. Skim any foam that rises.
    3. Pour into sterilised jars and seal. Store in a cool dark place.
