A dash of balsamic vinegar makes all the different to strawberry jam, cutting the sweetness and adding new depth of flavour. Try it!
This was my first time making jam, and I found the instructions did not give me a jam which set. I wondered if bringing it to a boil and then simmering meant it hadn't reached the setting point. So, after letting it simmer for an hour with no sign of thickening, I boiled it for five minutes and that did it! My husband prefers really sweet jam, so for that reason as well as simmering for extra time which reduced the amount of jam I had, I only used 1tbsp of vinegar. - 08 Jan 2017
Very delicious jam! I did add a slice of lemon zest to it while cooking and took it out before bottling the jam. - 07 Nov 2016
