Quark Stollen

    To make the best stollen you need to use quark cheese which can be hard to find. Cottage cheese makes an adequate substitute.

    Makes: 2 loaves

    • 200g butter, softened
    • 180g sugar
    • 2 eggs
    • 250g quark cheese or cottage cheese
    • juice and zest of 1 lemon
    • 250g raisins
    • 50g candied lemon peel
    • 50g candied orange peel
    • 125g almond meal
    • 3 tablespoons rum
    • 4 cups (500g) plain flour
    • 1 teaspoon baking powder
    • pinch cinnamon
    • pinch cloves
    • icing sugar, for dusting

    1. Preheat oven to 180 degrees C. Line a baking tray with baking paper.
    2. Cream the butter, sugar and eggs until fluffy. Add all the other ingredients in order, stirring to make a smooth dough.
    3. Divide the dough into two and form each half into a loaf. Bake in the preheated oven 1 hour.
    4. When cool, dust with a good layer of icing sugar.
