Marinated Prawn and Pineapple Skewers

This prawn and pineapple skewers recipe has a Caribbean feel from the addition of rum to the marinade. Simple and delicious as a summer appetiser.


Serves: 4 

  • 1 small sweet pineapple, peeled and cut into chunks
  • 400g king prawns, shelled and cooked
  • 150ml rum
  • dash olive oil
  • pinch red chilli pepper

Preparation:15min  ›  Cook:3min  ›  Extra time:1hour marinating  ›  Ready in:1hour18min 

  1. In a bowl, toss the prawns with rum, olive oil and chilli pepper. Let marinate in the refrigerator for 1 hour.
  2. Thread the prawns and pineapple alternately onto 8 wooden skewers. Sprinkle with a little more chilli pepper.
  3. Place on the barbecue 3 minutes maximum, just to heat through and char the prawns a little.
