Prawns are delicious in and of themselves and do not need a complex marinade or long marinating time. This is a great snack as part of a barbecue lunch.
In a bowl combine the olive oil, lime juice and zest, soy sauce and coriander (reserving some to garnish). Add the prawns and marinate 30 minutes to an hour.
Heat the barbecue. Put the prawns on a wire rack you can lift off the barbecue. Cook 5-7 minutes, turning once, until done. Serve garnished with coriander.
