Try this barbecue prawn marinade which has a touch of pomegranate molasses. You can find the molasses at gourmet and Middle Eastern shops.


Serves: 4 

  • Marinade
  • 60ml olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon Worcestershire sauce
  • 8 drops Tabasco
  • 1/2 teaspoon pomegranate molasses
  • 4 cloves garlic, crushed
  • salt and pepper, to taste
  • handful fresh coriander, chopped
  • Kebabs
  • 500g large prawns, peeled
  • 1 red capsicum, cut into squares
  • 1 white onion, cut into wedges
  • 3-4 tomatoes, cut into wedges
  • 6 large mushrooms, quartered

  1. Combine all marinade ingredients in a bowl and marinate the prawns one hour in the refrigerator.
  2. At the end of the marinating time, thread the prawns onto skewers, alternating with the vegetables.
  3. Heat the barbecue. Cook skewers 5-7 minutes until prawns are done, turning halfway through the cooking time.
