Elderberries add an amazingly delicious tart note to this fruit sauce which is perfect over ice cream, fruit salad or rice pudding.


Serves: 6 

  • 2 tart apples, peeled, cored and diced
  • 300g elderberries, stemmed and washed
  • 1 cinnamon stick
  • 1 5cm strip of lemon rind
  • 100g sugar, more as needed
  • 1 tablespoon cornflour

  1. In a saucepan, combine the apple, elderberries, cinnamon stick, lemon rind, sugar and a few tablespoons of water. Simmer 15 minutes until the apples and berries are very soft.
  2. Remove the rind and cinnamon stick and pass the liquid through a sieve. Return to the saucepan, taste for sugar and return to a simmer until the sauce thickens.
  3. Let cool and refrigerate. Stir well before using.
