Chilli Crab Omelette

    Fresh chilli, chives and coriander add zing to this lovely crab meat omelette. It's large enough to make a light lunch for 4.

    Serves: 4 

    • 2 tablespoons oil
    • 1 clove garlic, crushed
    • 1 medium onion, diced
    • 500g crab meat
    • 2 tablespoons fresh chilli, sliced
    • 2 tablespoons chives, diced
    • 2 tablespoons coriander leaves, chopped
    • 5 eggs, separated
    • salt and pepper, to taste
    • 1 tablespoon butter

    1. Heat the oil in a frypan and saute the garlic and onion about 5 minutes.
    2. Add the crab meat, chilli, chives, coriander and saute until warm, 2 more minutes.
    3. Beat the egg whites lightly, then beat in the egg yolks with salt and pepper to taste.
    4. Add the butter to the crab meat and melt, then pour in the eggs and mix well. Cover and cook gently 5 minutes until eggs are set. Serve hot.
