Spicy Chilli Crab

    Authentic Chinese chilli crab is very quick to make once the crabs are cleaned. Serve with rice and other side dishes as a Chinese feast.

    Serves: 4 

    • 500g crab
    • 1 egg white
    • 1 teaspoon cornflour
    • 30ml vegetable oil
    • 1/2 teaspoon salt
    • 2 dried red chillies
    • 2 cloves garlic, sliced
    • 1 teaspoon fresh ginger, diced
    • 1/2 teaspoon sugar
    • 1 teaspoon black pepper
    • 1 teaspoon rice wine

    1. Clean the crabs and chop into smaller pieces. Place in a bowl with the egg white, salt and cornflour then mix well.
    2. Heat the oil in a wok and stir fry the crab until red, then remove with a slotted spoon and drain on paper towels.
    3. Add remaining ingredients to the wok and stir fry 2 minutes. Return the crab to the wok and mix well, then serve.
