Stir Fried Beef and Sugar Snap Peas

    Use the thinnest beef slices you can to make this or ask your butcher to do it. Sugar snap peas, asparagus and cashews make a delicious weeknight stir fry dinner.

    Ingredients
    Serves: 4 

    • 500g sugar snap peas
    • 250g asparagus tips
    • 50ml olive oil
    • 300g mushrooms, sliced
    • 400g beef, very thinly sliced
    • 50ml soy sauce
    • 50g cashews
    • pinch fresh thyme
    • salt and pepper, to taste

    1. Cook the snap peas in boiling water for 10 minutes. Add the asparagus tips for the last 4 minutes. Drain.
    2. Heat the olive oil in a wok over medium-high heat and stir fry the mushrooms for 5 minutes. Add the beef, snap peas and soy sauce and stir fry 10 minutes.
    3. Just at the end of the cooking time add the asparagus tips, cashews, thyme and salt and pepper to taste.
