Sugar Snap Pea Soup

A fresh and lovely sugar snap pea soup which is ready in less than 30 minutes. Serve with an extra dollop of creme fraiche or some grated cheese.


Serves: 4 

  • 500g sugar snap peas, stringed
  • 2 vegetable stock cubes
  • 4 cups (1 litre) water
  • salt and pepper, to taste
  • 1 tablespoon sherry
  • 2 tablespoons creme fraiche or sour cream

  1. Heat the water and stock cubes to a boil in a saucepan. Add the sugar snap peas and boil 5 minutes.
  2. Drain the peas, reserving the stock, and place in a blender. Add a little stock and blend the peas to a smooth puree. Return to the saucepan with the stock. Reheat.
  3. Add sherry and salt and pepper to taste. Just before serving, stir through the creme fraiche.
