Sugar snap peas, green peas, carrots and ginger make a lovely vegetable side, perfect when sugar snaps are in season.


Serves: 6 

  • 500g sugar snap peas
  • 300g green peas, podded
  • 50ml olive oil
  • 1 onion, diced
  • 300g carrots, peeled and sliced
  • 5cm fresh ginger, finely diced
  • salt and pepper, to taste

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Heat a saucepan of salted water to boiling. Add the sugar snap peas and boil 5 minutes. Add the green peas and boil 5 minutes more. Drain.
  2. Meanwhile, heat the olive oil in a frypan and saute the onion for 5 minutes. Add the carrots and ginger, stir well and cook 10 minutes more. Add in the snap peas and salt and pepper to taste.
