Totally Awesome Satay Chicken

This is my really easy and totally awesome satay chicken. It makes 4 serves so good batch cooking. Can be served with either brown rice or wok noodles.

Serves: 2
- peanut oil, for stir frying
- 500g chicken breast, diced
- 1 onion, diced
- 1 red capsicum, seeded and diced
- 220g button mushrooms, sliced
- 2 tablespoons peanut butter
- 1 sachet Maggi Asian Satay mix (TM)
- 270ml light coconut cream

- Make sure all your ingredients are prepared beforehand. I usually have chicken and onion in one bowl and capsicum and mushrooms in another bowl.
- Heat peanut oil in wok to high, add chicken and onion then cook until chicken is starting to change colour.
- Add mushrooms and capsicum and continue to cook until chicken is golden.
- Add peanut butter, satay chicken packet mix and coconut cream. Stir well.
- Reduce heat to low and simmer for 15-20 minutes.
