Totally Awesome Satay Chicken

    This is my really easy and totally awesome satay chicken. It makes 4 serves so good batch cooking. Can be served with either brown rice or wok noodles.

    Serves: 2 

    • peanut oil, for stir frying
    • 500g chicken breast, diced
    • 1 onion, diced
    • 1 red capsicum, seeded and diced
    • 220g button mushrooms, sliced
    • 2 tablespoons peanut butter
    • 1 sachet Maggi Asian Satay mix (TM)
    • 270ml light coconut cream

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Make sure all your ingredients are prepared beforehand. I usually have chicken and onion in one bowl and capsicum and mushrooms in another bowl.
    2. Heat peanut oil in wok to high, add chicken and onion then cook until chicken is starting to change colour.
    3. Add mushrooms and capsicum and continue to cook until chicken is golden.
    4. Add peanut butter, satay chicken packet mix and coconut cream. Stir well.
    5. Reduce heat to low and simmer for 15-20 minutes.
