Osso Bucco in the Pressure Cooker

    Why make life harder than it needs to be? Osso bucco normally needs long slow simmering for hours, but this pressure cooker version is ready much more quickly.

    Serves: 4 

    • 1 kg sliced veal shanks
    • salt and pepper, to taste
    • 2 tablespoons flour
    • 40g butter
    • 1 onion, diced
    • 1 clove garlic, diced
    • 450ml water
    • 150ml dry white wine
    • 1 tablespoon tomato paste
    • 1 bouquet garni (parsley, thyme, bay leaf and rosemary tied together)

    1. Season the shanks with salt and pepper then lightly dust with flour.
    2. Melt the butter in the pressure cooker and brown the meat over medium/high heat. Set aside.
    3. Add the onion and garlic to the cooker and cook 5 minutes or until onion is soft. Reduce heat to medium. Return the meat to the cooker and add water, wine, tomato paste and bouquet garni. Close the cooker and cook on low pressure 20 minutes. Remove the bouquet garni before serving.
