Thai Green Prawn Curry

    The garnishes of kaffir lime leaves, green chillies and Thai basil are essential to make this Thai green curry taste authentic.

    Serves: 4 

    • 1 1/2 cups coconut milk
    • 3 tablespoons green curry paste
    • fish sauce, to taste
    • 1 small purple eggplant, diced
    • 12 king prawns, peeled and deveined
    • 4 kaffir lime leaves, torn
    • 3 green chillis, seeded and thinly sliced
    • handful Thai basil

    1. Heat 1/2 cup coconut milk and the curry paste in a saucepan, frying until fragrant, about 5 minutes.
    2. Season with fish sauce and add remaining coconut milk. Bring to a boil and add eggplant. Simmer 5 minutes. Add prawns and simmer 5 more minutes.
    3. Add lime leaves, green chillies and Thai basil. Simmer 1 more minute and serve.
