    This recipe makes a fair amount of curry paste but you don't have to use it all at once. The leftovers will keep two weeks in a sealed container in the fridge.

    Ingredients
    Serves: 4 

    • 3 bird's eye chillies
    • 2 long green chillies
    • pinch salt
    • 1 tablespoon galangal, diced
    • 2 tablespoons lemongrass, finely diced
    • 1 teaspoon lime zest
    • 2 teaspoons coriander roots, diced
    • 2 teaspoons turmeric
    • 1 tablespoon fresh ginger, diced
    • 3 tablespoons onion shallots, diced
    • 3 tablespoons garlic, diced
    • 1 teaspoon shrimp paste
    • 1 teaspoon white peppercorns
    • 1 teaspoon coriander seeds, toasted

    1. Place all the ingredients in a food processor and process to a fine paste.
