Use your favourite variety of potatoes for this easy Indian meal. It's a great meal for when you are in a hurry served with some naan bread.

Serves: 4 

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 tomatoes, diced
  • 8 red chillies
  • 1/2 teaspoon chilli powder
  • 1 teaspoon cumin seeds
  • 1 cup water
  • salt, to taste
  • 500g potatoes, diced

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Heat the oil and brown the onion, about 5 minutes. Add tomatoes, chillies, chilli powder, cumin seeds, 1/2 cup water and salt. Simmer until the liquid has evaporated.
  2. Add the potatoes with the remaining water, cover and simmer 20 minutes until potatoes are tender but not mushy.
