A vegetarian curry featuring cauliflower, potatoes and tomatoes. The spicing is quite subtle, not to hot at all - but you can add more chilli if you like.

Serves: 3 

  • 3 tablespoons sunflower oil
  • 1 large onion, diced
  • 1 teaspoon garlic paste
  • 1 tablespoon fresh ginger, cut into matchsticks
  • 2 tomatoes, diced
  • 1/2 teaspoon turmeric
  • 1 teaspoon chilli powder
  • 1 teaspoon cumin seeds
  • salt, to taste
  • 500g potatoes, diced
  • 500g cauliflower, cut into florets
  • 1/2 cup water

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Heat the oil in a saucepan and brown the onion. Add garlic paste, ginger, tomatoes, spices and salt to taste. Add potatoes, cauliflower and water. Cover and simmer 20 minutes until the veggies are tender.
