Indian Chicken Coconut Curry

    This is a very simple curry, much less elaborate than some, but it has a lovely taste with many layers of flavours. Serve with steamed rice.

    Serves: 4 

    • 3 tablespoons vegetable oil
    • 2 onions, sliced
    • 3cm fresh ginger, diced
    • 2 cloves garlic, diced
    • 1/2 teaspoon ground turmeric
    • 1 teaspoon chilli powder
    • 2 teaspoons garam masala
    • 400g boneless, skinless chicken breast, cubed
    • 1 1/4 cups water
    • 3/4 cup coconut milk
    • 2 tomatoes, quartered
    • salt, to taste

    1. Heat the oil in a saucepan, add the onions and cook until golden. Add the ginger, garlic and ground spices. Add chicken and cook, stirring, five minutes.
    2. Add 1 1/4 cups water. Bring to the boil, reduce heat and simmer 10 minutes covered.
    3. Turn the heat very low and add the coconut milk. Simmer 10 minutes or until chicken is cooked. Stir in tomatoes and salt and cook 5 more minutes.
