    This lamb curry contains corn, which is unusual but delicious. I've used tinned corn but you can just as well make it with fresh.

    Ingredients
    Serves: 4 

    • 1 kg lamb, cubed
    • 200g onions, diced
    • 75g garlic, diced
    • 12 fresh green chillies
    • 1/2 cup ghee
    • 1 1/2 teaspoons cumin seeds
    • 10 cardamom pods
    • 10 cloves
    • 2 bay leaves
    • 3 cups water
    • 1 (420g) tin corn, drained
    • juice of 1/2 lemon
    • Marinade
    • 300g yoghurt
    • 2 teaspoons ground coriander
    • 1 teaspoon turmeric
    • 2 teaspoons salt

    1. Mix together the marinade ingredients and add the lamb. Let marinate 15 minutes.
    2. In a blender, combine the onion, garlic and green chillies. Blend until smooth.
    3. Heat the ghee in a heavy frypan then add all the spices. When they crackle, add the marinated lamb and remaining marinade. Cook 15 minutes, stirring.
    4. Add the onion paste and cook 10 more minutes. Add the water, reduce heat and simmer 30 minutes.
    5. Add the corn and cook 10 more minutes. Finish with the lemon juice and serve.
