Bacon Stuffed Potatoes

    You can't go wrong with a baked potato stuffed with bacon. I love the flavour and smoothness that the sour cream brings to the dish.

    Serves: 2 

    • 1 large potato
    • 3 tablespoons sour cream
    • 4 rashers smokey bacon
    • 2 tablespoons grated Cheddar cheese
    • spring onion, sliced, to serve

    1. Preheat oven to 200 degrees C. Bake the potato 40 minutes, or until soft in the middle. Let cool but leave the oven on.
    2. Fry the bacon and cut into strips. Halve the potato and scoop out the insides into a bowl. Add the sour cream and the bacon to the bowl then mix well.
    3. Fill the potatoes with the mixture then sprinkle with the cheese.
    4. Bake in the oven 5 minutes until the cheese melts. Serve sprinkled with the spring onion.
