Orange Cupcake Icing

    This cupcake icing is a little more work but when you taste it you will know it was worth it! A candy thermometer is a good help here.

    Serves: 24 

    • 1 cup white sugar
    • 1 tablespoon golden syrup
    • pinch cream of tartar
    • 1/2 cup water
    • 2 egg whites
    • 1/4 cup icing sugar
    • 1 tablespoon orange juice
    • 1 tablespoon orange zest
    • 1 teaspoon vanilla essence

    1. In a saucepan, combine sugar, golden syrup, cream of tartar and water. Cover and simmer 3 minutes then uncover and cook to the soft ball stage, 118 degrees C.
    2. Meanwhile, beat the egg whites until stiff. With the beater running, pour in the syrup. Beat 10 minutes.
    3. Add the icing sugar, juice, zest and vanilla. Beat until thick and shiny.
