This is a self saucing style chocolate coffee cake, it makes its own pudding as it bakes. It is lovely served warm with ice cream or cream.

Makes: 1 cake

  • 60g unsalted butter, room temperature
  • 2 teaspoons vanilla essence
  • 1/2 cup light cream
  • 1 cup cake flour
  • 2 teaspoons baking powder
  • 1 cup sugar, divided
  • 1/4 teaspoon salt
  • 1/2 cup cocoa powder
  • 1 cup dark chocolate chips
  • 1 cup walnuts, diced
  • 3/4 cup brown sugar
  • 1 3/4 cups strong brewed coffee

  1. Preheat oven to 200 degrees C and grease a square cake tin.
  2. Place the butter in a glass jug and melt in the microwave, then stir in the vanilla and light cream.
  3. In a bowl, sift the flour, baking powder, 3/4 cup sugar, salt and 1/4 cup cocoa powder. Add chocolate chips and walnuts and toss. Pour in the butter and mix well. Pour into the cake tin.
  4. In a bowl, combine the brown sugar, remaining 1/4 cup white sugar and remaining cocoa. Sprinkle over the cake batter. Pour the hot coffee over that.
  5. Bake until top is set, about 20 minutes. Serve warm.
