Whiskey Molasses Cake Glaze

    Whiskey adds a delightful perfume to this cake glaze and also helps the cake stay fresh. Use it with a pound cake or a ring cake.

    Serves: 8 

    • 1 teaspoon water
    • 1/2 teaspoon bicarb soda
    • 1 cup sugar
    • 1/2 cup buttermilk
    • 110g unsalted butter
    • 1 teaspoon molasses
    • 1/2 cup whiskey
    • 1 teaspoon vanilla essence

    1. Stir the water and bicarb soda together in a small bowl.
    2. In a heavy saucepan, heat the sugar, buttermilk, butter and molasses to a boil, stirring to dissolve sugar. Reduce heat and stir in the bicarb soda mix. Simmer about 5 minutes, until golden and thickened. Remove from heat and add whiskey and vanilla.
    3. Drizzle half the glaze over a hot cake, allowing it to soak in. Keep the rest in a sauce boat and reheat in the microwave just before serving.
