Red velvet cakes are impressive looking and very popular at weddings, but did you know how simple they are to make? Ice with royal icing.

Makes: 1 layer cake

  • 2 1/4 cups cake flour
  • 1 teaspoon salt
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup margarine
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup buttermilk
  • 30ml red food colouring
  • 1 teaspoon vanilla essence
  • 1 teaspoon white wine vinegar
  • 1 teaspoon bicarb soda

  1. Preheat oven to 200 degrees C and grease two 23cm round cake tins.
  2. Sift together the flour, salt, cocoa and baking powder.
  3. With a beater, beat the margarine and sugar together until creamed. Add eggs, one at a time, while beating.
  4. Mix together the buttermilk, red food colouring and vanilla. Add alternately with the sifted flour mixture, beating well.
  5. Mix together the vinegar and bicarb soda. It will foam up. Quickly fold into the batter, then pour the batter into the cake tins. Bake until they test done, about 15 minutes.
