Classic Butter Cake

    A good butter cake is simple and doesn't really need any icing at all. This one is only a tad more trouble than using cake mix and twice as good.

    Makes: 1 cake

    • 3 eggs
    • 2 cups cake flour, sifted
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 120g unsalted butter, room temperature
    • 1 cup white sugar
    • 2 teaspoons vanilla essence
    • 3/4 cup milk

    1. Preheat oven to 200 degrees C and grease a 23x33cm baking tin.
    2. Sift together the flour, baking powder and salt. Cream the butter and sugar in a mixer until pale, about 3 minutes. Beat in the eggs one at a time then vanilla. Beat 5 minutes.
    3. Add the flour mixture alternately with the milk in about 4 batches. Mix until just smooth, then pour into the baking tin. Bake 20 minutes or until it tests done.
