Fluffy Buttercream Icing

    A slightly different buttercream but very fancy, this one has a meringue base to which the butter is added. It will keep a week in the fridge.

    Makes: 5 cups icing

    • 1 cup white sugar
    • 5 egg whites
    • 50ml water
    • 450g unsalted butter, room temperature
    • 1 teaspoon vanilla essence

    1. In the bowl of an electric beater, combine sugar, egg whites and water. Place over simmering water in a saucepan and whisk gently until smooth and warm.
    2. Put the mixer bowl in the mixer and beat at high speed until stiff and shiny, about 5 minutes.
    3. Beat in the butter about 1 tablespoon at a time and add the vanilla. Beat until all is smooth.
