Chocolate Cognac Ganache

    Make the ganache, then chill it a few hours before beating again and it will be silky smooth and light. You can easily double this recipe if needed.

    Makes: 3 cups icing

    • 2 cups thickened cream
    • 200g dark chocolate, diced
    • 1 tablespoon Cognac

    1. Heat the cream in a small saucepan until just simmering. Pour over the chocolate in a mixing bowl and let chocolate melt, about 1 minute. Add Cognac and whisk until smooth. Cover and chill 6 hours. Just before using, beat with an electric beater until firm, about 1 minute.
