White Chocolate Citrus Ganache

    A straightforward ganache but a lovely combination of white chocolate and lemon and orange zest. So easy and so rich.

    Makes: 2 cups

    • 1 cup thickened cream
    • 170g white chocolate, diced
    • 1/2 teaspoon lemon zest
    • 1/2 teaspoon orange zest

    Preparation:10min  ›  Extra time:6min chilling  ›  Ready in:16min 

    1. Heat the cream to a simmer in a small saucepan. Pour over the diced chocolate in a mixing bowl, let sit a minute then whisk until smooth. Add zest and whisk again. Cover and chill six hours.
    2. Beat the ganache with an electric beater until it has the consistency of whipped cream but don't over beat.
