Dark Chocolate Frosting

    Makes: 2 cups frosting

    • 170g dark chocolate, diced
    • 110g unsalted butter, room temperature
    • 1/2 cup sour cream, room temperature
    • 2 1/2 cups sifted icing sugar
    • 1 teaspoon vanilla essence

    1. Melt the chocolate in the microwave or over a double boiler.
    2. With an electric mixer beat the butter until creamy. Add sour cream and beat until smooth. Add icing sugar and beat until light, then add vanilla and chocolate. Beat at high speed 1 minute.
