Coconut Pecan Cake Frosting

    Coconut and pecans make a delicious frosting for a chocolate cake or a German chocolate cake. You could also use almonds.

    Makes: 3 cups icing

    • 1 cup evaporated milk
    • 1 1/4 cups white sugar
    • 4 egg yolks, beaten
    • 110g unsalted butter, cubed
    • 1 teaspoon vanilla essence
    • 1 1/2 cups shredded coconut
    • 1 1/4 cups toasted pecans, diced

    1. In a saucepan, combine evaporated milk, sugar, yolks and butter and cook until butter has melted. Reduce heat and cook 2 minutes more or until thickened.
    2. Remove from heat and stir in vanilla, cococnut and pecans. Let cool 1 hour before using.
