Hot Cross Buns (Using Apple Pie Spice)

    These are a super easy hot cross buns that use my favourite brand of spice, Your Inspiration at Home, apple pie spice.

    Serves: 12 

    • 1 cup milk
    • 7g dried yeast
    • 1/4 cup caster sugar
    • 3 cups flour
    • 1 1/2 teaspoons Your Inspiration at Home(TM) Apple Pie Spice
    • 50g butter, melted
    • 1 egg
    • 1 cup of mixed sultanas, raisins and currants
    • 1/4 cup flour
    • 2 tablespoons milk
    • Glaze
    • 60g caster sugar
    • 1 teaspoon Your Inspiration at Home(TM) Apple Pie Spice
    • 55ml boiling water

    1. Combine the milk, yeast and caster sugar then sit in warm place for 10-15 minutes until fluffy.
    2. Mix the flour and 1 1/2 teaspoons spice. Make a well in centre and add the melted butter, egg and yeast mixture then mix together. Knead mixture until well combined.
    3. Knead in the cup of mixed dried fruits. Make into a ball then place in a lightly oiled bowl in a warm place for 20 minutes until it doubles in size.
    4. Knock dough down, make into 12 balls, place in a deep baking tray and cover with a damp tea towel for 20 minutes in a warm place.
    5. Preheat the oven to 200 degrees C.
    6. Make white paste for the cross using the flour and milk to make a paste consistency. Use a piping bag to draw a cross over buns just before placing in the oven. Bake for 15 minutes.

    8. Combine the caster sugar, apple pie spice and boiling water in a small saucepan then simmer until the sugar has dissolved. Brush over the buns once cooked.
