Combine the milk, yeast and caster sugar then sit in warm place for 10-15 minutes until fluffy.
Mix the flour and 1 1/2 teaspoons spice. Make a well in centre and add the melted butter, egg and yeast mixture then mix together. Knead mixture until well combined.
Knead in the cup of mixed dried fruits. Make into a ball then place in a lightly oiled bowl in a warm place for 20 minutes until it doubles in size.
Knock dough down, make into 12 balls, place in a deep baking tray and cover with a damp tea towel for 20 minutes in a warm place.
Preheat the oven to 200 degrees C.
Make white paste for the cross using the flour and milk to make a paste consistency. Use a piping bag to draw a cross over buns just before placing in the oven. Bake for 15 minutes.
Glaze:
Combine the caster sugar, apple pie spice and boiling water in a small saucepan then simmer until the sugar has dissolved. Brush over the buns once cooked.
