Creamy Caramel Cupcake Icing

    A quick and easy caramel icing for cupcakes which makes a nice change from the usual chocolate or lemon icing. Creamy and rich.

    • 65g butter, melted
    • 1/3 cup light thickened cream
    • 3/4 cup packed brown sugar
    • 1/2 teaspoon vanilla essence
    • 1 3/4 cups icing sugar

    1. Combine the butter, cream and brown sugar in a medium saucepan. Bring to a boil, stirring frequently. Remove from the heat and stir in the icing sugar and vanilla. Set the saucepan over a bowl of ice water and whisk or beat with an electric mixer until fluffy. Ice cupcakes when they are completely cool.
