Chicken alla Cacciatore

This is a simple, down to earth recipe for chicken cacciatore which might be a little different from others you have had. Serve with pasta or bread.

Serves: 4 

  • 1 1/5 kg chicken pieces
  • salt and pepper, to taste
  • 80g butter
  • 3 tablespoons vegetable oil
  • 120g prosciutto, diced
  • 1 tablespoon dried sage
  • 3/4 cup white wine

  1. Sprinkle the chicken pieces all over with salt and pepper.
  2. Heat half the butter and all the oil in a heavy frypan and cook the chicken pieces until golden brown all over. Pour off most of the fat and add prosciutto, sage and wine. Cover and cook until tender, about 20 minutes.
  3. Remove the chicken and put on a hot serving plate. Melt the remaining butter in the pan to make a sauce. Serve the sauce separately.
