Basic Poached Chicken and Stock

Lots of recipes call for leftover chicken or cooked shredded chicken. This is a great way to make the chicken and you get stock out of it as well.

Makes: 1 poached chicken

  • 1 chicken (about 1 1/2 kg)
  • 8 cups water
  • 1 onion, stuck with 2 cloves
  • 2 carrots, quartered
  • 2 celery stalks with leaves
  • 1 bay leaf
  • 10 peppercorns
  • 1 sprig thyme
  • salt, to taste

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Combine all the ingredients in a stockpot and bring to the boil. Simmer 30 minutes until chicken is tender. Skim the foam as it cooks. Let the chicken cool in the stock, then remove and shred the meat. Strain and keep the stock.
