    A different take on tandoori chicken, this spicy chicken dish is baked in the oven instead of barbecued. Serve with rice.

    Ingredients
    Serves: 4 

    • 2 small chickens, cut in half
    • 2 cups onion, diced
    • 1 clove garlic, diced
    • 2 green capsicums, diced
    • 2 tomatoes, diced
    • 2 teaspoons salt
    • 1 tablespoon curry powder
    • 1 tablespoon coriander
    • 1 tablespoon cumin
    • 1 teaspoon turmeric
    • 1/2 teaspoon cinnamon
    • 1 teaspoon black pepper
    • 1/2 cup melted butter
    • 2 cups chicken stock

    Directions

    1. Preheat the oven to 180 degrees C.
    2. Place chickens in a large baking tin, skin side up. Sprinkle with onion, garlic, capsicum, tomatoes, salt and spices. Pour the melted butter over that.
    3. Add the chicken stock and bake, basting frequently, 50 minutes.
