Lemon Basil Chicken Wraps

These chicken wraps great for a picnic, brighter and more refreshing than chicken salad. You can also up open the pitas and fill with the chicken mixture.

Serves: 4 

  • 1 teaspoon lemon zest
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • salt and pepper, to taste
  • 1 cup fresh basil, chopped
  • 3 spring onions, sliced
  • 2 tablespoons capers
  • 3 cups shredded leftover chicken
  • 4 pita breads

  1. In a bowl, combine lemon zest, lemon juice, oil, mustard, salt and pepper. Add basil, spring onions and capers and stir. Add the chicken and toss. Distribute onto pita breads and roll up.
