Delicious chicken meatballs with sun dried tomatoes and fennel giving a distinctly Italian touch. I like to serve these in bread rolls with fried onions.

Makes: 16 meatballs

  • 500g chicken mince
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup sun dried tomatoes, chopped
  • 1/2 cup Parmesan, grated
  • 1 slice white bread, crumbled
  • 1 teaspoon fennel seeds
  • salt and pepper, to taste

Preparation:15min  ›  Cook:8min  ›  Ready in:23min 

  1. In a large bowl, combine all ingredients well. With wet hands, form into 16 meatballs. Refrigerate until required.
  2. Preheat the barbecue to medium and lightly brush with oil. Barbecue the meatballs 8 minutes or until done, turning frequently.
