Fried Rice with Chicken

    Fried rice is simple to make and is a great use for leftover chicken. It is best made with leftover rice which has a better texture than hot fresh rice.

    Serves: 4 

    • 2 eggs
    • 1/2 red capsicum, diced
    • 1/4 cup soy sauce
    • 1 1/2 teaspoons sugar
    • 2 teaspoons sesame oil
    • 2 tablespoons vegetable oil
    • 2 tablespoons fresh ginger, grated
    • 2 cloves garlic, crushed
    • 500g asparagus, thinly sliced
    • 6 spring onions, sliced
    • 3 cups leftover chicken, shredded
    • 3 cups cooked or leftover rice
    • 3 tablespoons rice vinegar
    • 1 cup frozen peas

    1. In a bowl, whisk together eggs, capsicum, 1 tablespoon soy and 1/2 teaspoon sugar. Heat sesame oil in a fry pan and cook eggs until set. Transfer to a chopping board and slice into strips.
    2. In a wok, heat vegetable oil. Add ginger and garlic and cook 30 seconds. Add asparagus and spring onions and stir fry a few minutes.
    3. Add chicken and rice. In a bowl, whisk together vinegar and remaining soy and sugar. Pour over the rice and stir fry 5 more minutes. Stir in frozen peas and eggs and cook on more minute.
