Chicken Mince Pad Thai

    Probably the most famous dish of Thailand, pad Thai can either uses cooked shredded chicken or chicken mince for convenience.

    Ingredients
    Serves: 4 

    • 125g rice noodles
    • 2 tablespoons oil
    • 3 spring onions, thinly sliced
    • 2 cloves garlic, crushed
    • 350g chicken mince
    • 8 tiger prawns, peeled and deveined
    • 1/4 cup brown sugar
    • 2 tablespoons tomato sauce
    • 2 tablespoons rice vinegar
    • 1 tablespoon fish sauce
    • 2 eggs, lightly beaten
    • 2 cups bean sprouts
    • 3 tablespoons fresh coriander
    • 1/4 cup peanuts, diced

    1. Soak the noocles in boiling water for 10 minutes. Drain.
    2. Heat oil in a wok. Add spring onions and garlic and cook 1 minute. Add chicken mince and cook 2 more minutes, until almost done.
    3. Add prawns, sugar, tomato sauce, vinegar and fish sauce and toss well. Add noodles and cook, tossing, for 3 more minutes until prawns are cooked through. Pour in the eggs and toss to scramble.
    4. Put the noodles and bean sprouts on 4 plates. Sprinkle with peanuts and coriander.
