Pesto Chicken Meatballs

    These chicken meatballs are lovely simmered with tomatoes and served over pasta. Or serve them as party snacks with toothpicks.

    Serves: 4 

    • 2 cloves garlic
    • 1 cup fresh basil leaves
    • 1/3 cup grated Parmesan
    • 1/4 cup light cream
    • 1/4 cup pine nuts
    • salt, to taste
    • 500g chicken mince
    • 1 egg
    • 1/4 cup breadcrumbs
    • 1/4 cup flour
    • 1/4 cup olive oil

    1. In a food processor pulse garlic with basil, Parmesan, cream, pine nuts and salt until combined.
    2. Place in a mixing bowl, and add chicken, egg and breadcrumbs. Using wet hands, shape into 24 small meatballs. Coat lightly with flour.
    3. Heat oil in a frypan and fry meatballs 4 minutes, or until golden brown, stirring.
