Smoked Chicken Pasta Bake

You can use any short pasta you like for this chicken pasta bake but I think spiral pasta works best. Smoked chicken is a great ingredient, you can get it at Coles.

Serves: 15 

  • 300g spiral pasta
  • 2 tablespoons butter
  • 1 red capsicum, diced
  • 2 tablespoons plain flour
  • 2 1/2 cups milk
  • salt and pepper, to taste
  • pinch nutmeg
  • 250g smoked chicken, diced
  • 180g gruyere cheese, diced
  • 1/4 cup Parmesan cheese, grated

  1. Preheat the oven to 180 degrees C. Meanwhile, boil the pasta until al dente. Drain.
  2. Melt the butter over medium heat in a saucepan. Add capsicum and cook 5 minutes. Sprinkle over the flour and stir well. Gradually pour in milk, whisking as you go. Add salt, pepper and nutmeg then cook, whisking, until thickened, about 5 minutes. Stir in smoked chicken and gruyere.
  3. Stir in the pasta then transfer to a baking dish. Sprinkle with the Parmesan and bake 25 minutes or until golden.
